METHOD:
Separate egg whites from yolks
Whisk the egg whites with a whisk or in an electric mixer until they double in volume.
Add the sugar to the egg whites and mix.
Add the yolks and slowly add the flour.
Layer the dough in a rectangular baking dish, greased and covered in wax paper.
Preheat the oven to 356 degrees.
Cook for 15 minutes or until golden.
Remove from the oven, and spread doce de leite over the surface, leaving the edges out.
Roll the dough.
Heat the remaining doce de leite in a pan and use it as topping.
Cut strips of wax paper and layer them over the swiss roll in a diagonal pattern.
Powder the icing sugar over the swiss roll and over the strips of wax paper.
Remove the strips.
